Coconut chicken with apricot sauce

This is a favorite chicken recipe for our family. I love combining fruit with meat because of the taste and moistness it gives the meat. This recipe calls for breading the chicken with a mixture of flour and coconut and I love the crunch the coconut gives the breading! Oh and let me just say something about this sauce...it is AMAZING. I hope you enjoy this recipe as much as we do!

Ingredients:
Flour
1 cup Buttermilk
1 Egg
1 cup Sweetened Coconut Flakes
½ tsp Garlic Powder
½ cup Bread Crumbs
½ tsp Salt
¼ tsp Black Pepper
3 tb Canola Oil
4 Boneless Chicken Breasts
Sauce:
¼ cup Apricot Preserves
½ tb White Vinegar
1 tb Soy Sauce
Directions:
Combine sauce ingredients. Bring to a light boil then let simmer while chicken is prepared.

Prepare 3 bowls: flour, beaten egg and buttermilk, and coconut with breadcrumbs. Keeping chicken thinly sliced, season w/ s&p. Dredge first in flour, then egg, and then coconut mixture. Saute on stove until chicken is browned on the outside and cooked through.

Pour sauce over chicken and serve.
